I Can See The Future

And what I see is …..I doubt that I am going to be blogging for very long. It only makes me realize how old and boring I really am !! Trying to post every day is not possible for me, I have nothing to tell <g> and very little to share.

I thought, at first that this would be fun but I soon realized I don’t know anything 🙂

Oh well, today I fixed veggie cheese soup and so tonight we are having that and grilled cheese sandwiches. I weighted yesterday and I have lost 17 pounds and I was pleased with that considering I am so old and not at all active. My weight loss is going to be a long slow process but the food is good so I am really into it…..Now I want everyone to be into it !!!

We are having our problems trying to keep Misti from “cheating”. What I have to explain to her is….We are eating such good food that if you add extra calories to the day you have set yourself back a week. NO MORE CHEATING !!! I did cheat once myself and would have prolly lost a lot more had I not, so I am not doing that again…(Taco Tuesdays at Rosa’s).

A few days ago we tried a new diet desert and it was awesome !!! It is called "Fluffy key Lime Pie". Misti sent me the email with the recipe from, "Taste of Home".
METHOD:
TIME: Prep: 20 min. + chilling
Ingredients:
1 package (.3 ounce) sugar-free lime gelatin
1/4 cup boiling water
2 cartons (6 ounces each) reduced-fat key lime yogurt
1 carton (8 ounces) frozen fat-free whipped topping, thawed
1 reduced-fat graham cracker crust (8 inches)
Directions:
In a large bowl, dissolve gelatin in boiling water. Whisk in yogurt. Fold in whipped topping. Pour into crust.
    Cover and refrigerate for at least 2 hours or until set. Yield: 8 servings.

A good Day For Gaming !!

Today is rainy and a little cold so I am finding myself playing in my World of Warcraft game.
I have 2 level 19 twinks that I play alot. Mostly at night but today is a good day for playing. When my daughter is home (we live together along with her daughter) she and I do alot of battle grounds. It is PvP (player versus player) and the object is to capture 3 of the other teams flags, then your the winner…..We win some and we lose some !!! I have a lot of fun and it keeps me busy…..I am not the oldest person playing (maybe the oldest female) but I for sure know 2 men who are older than I am who play. One is from Florida and one from Texas. The one from Florida is 65 years old and the one from Texas is 69 years old.
We play from people who live in Australia, Canada and all over the United States. Anyway, when I am killing time I play WoW. I realize it isn’t for everyone and for only a few seniors play but  it is always nice to happen upon those few people !!! We have ventrilo so we can put on our headsets and talk to each other . A lot of fun (imho ).

Last night we had an awesome "healthy" dinner. Although it took 2 of us to get it cooked so I doubt that it will be a once a week meal. This recipe serves 12. It is found in the March 23,2009 issue  of  Taste of Home healthy cooking and was a grand prize winner for Heather O’Neill from Troy, Ohio

Lasagna Deliziosa

9 uncooked lasagna noodles

1 pkg (20 oz.) Italian turkey sausage links, casing removed

1/2 lb lean ground beef (I used veggie crumbles)

1 large onion, chopped

2 garlic cloves, minced

1 can (28 oz.) diced tomatoes, undrain

1 can (12 oz) tomato paste

1/4 cup water

2 tsp sugar

1 tsp dried basil

1/2 tsp fennel seed

1/4 pepper

1 egg, lightly beaten

1 container (15 oz) ricotta cheese

1 Tbsp. minced fresh parsley

1/2 tsp salt

2 cups (8 oz) shredded part-skim mozzarella cheese

3/4 cup parmesan cheese

1. Cook noodles according to package directions. Meantime, in a dutch oven cook sausage, beef, onion and garlic over medium heat until meat is no longer pink, drain.

2. Stir in tomatoes, tomato paste, water, sugar, basil, fennel seed and pepper. Bring to a boil. Reduce heat, cover and simmer for 15 to 20 minutes, stirring occasionally.

3. In a small bowl, combine the egg, ricotta cheese, parsley and salt. Drain noodles and rinse in cold water. Spread 1 cup meat sauce in a 13 inch X 9 inch baking dish coated with cooking spray. Top with three noodles, c cups meat sauce, 2/3 cup ricotta cheese mixture and 1/4 cup parmesan cheese, 2/3 cup mozzarella cheese. Repeat layers twice.

4. Cover and bake at 375 degrees for 40 minutes. Uncover bake 10 – 15 minutes longer until a thermometer reads 160 degrees. Let stand 10 minutes before cutting.

Nutrition Facts: 1 piece equals 323 calories, 12 g fat (5g saturated fat)79 mg cholesterol, 701 mg sodium, 28 carbohydrates, 4 g fiber, 25 g protein. 

Diabetic Exchanges: 3 lean meat, 2 vegetables, 1 fat, 1 starch

This is a wonderful dish we just loved it !!

Tuesday In Texas

Today is overcast with promise of rain for the next few days. We need the rain…

The “healthy” recipe I am sharing with you today is really, really good !!

It comes by way of “Taste of Home” magazine, March 23, 2009 issue and was submitted by, Vicky Priestley. Alum Creek, West Virginia

Yields 6 servings   3/4 cup stir-fry with 1/2 cup rice equals 304 calories, 8g fat (2 g saturated far) 42 mg cholesterol. 407 mg sodium, 37 g carbohtdrates, 3 g fiber, 19 g protein.

Diabetic Exchanges: 2 lean meat, 2 vegetables, 1 1/2 starch, 1 fat

Stir-fry Steak & Veggies

1 1/2 cups uncooked instant brown rice

1 Tbsp cornstarch

1 Tbsp brown sugar

3/4 tsp ground ginger

1/2 tsp chili powder

1/4 tsp garlic powder

1/4 tsp pepper

1/2 cup cold water

1/4 soy sauce

1 lb boneless sirloin steak, cut into 1/2 inch cubes

2 Tbsp canola oil    divided

1 pkg (16 oz) frozen stir-fry vegetable blend, thawed……I used broccoli stir-fry

1. Cook rice according to package directions. Meanwhile, in a small bowl, combine the cornstarch, brown sugar and seasonings. Stir in water and soy sauce until smooth: set aside.

2. In a large nonstick skillet or wok coated with cooking spray, stir-fry beef in 1 Tbsp oil until no longer pink. Remove and keep warm. Stir-fry vegetables in remaining oil until crisp-tender.

3. Stir cornstarch mixture and add to the pan: cook and stir for 2 minutes or until thickened. Add beef, heat through. Serve with rice.

This is very easy to make and yum !!

Weekends Over

Tomorrow it is rise and shine, one hour earlier than we have been getting up. So prepare to wake up to the dark !! Lovely thought, huh?

My healthy choice recipe is soooo good IF you like brussel sprouts.

 

Fried Brussels Sprouts recipe – 163 calories

Ingredients:
1 lb Brussels sprouts
3-4 garlic cloves, minced
4-6 tablespoons extra virgin olive oil
salt, to taste

lemon juice (optional)

Preparation:
1. Remove the brown outer leaves of the Brussels sprouts.
2. Cut the Brussels sprouts in half.
3. In a saucepan, heat the olive oil over medium heat.
4. Add the Brussels sprouts and fry them for about 10-15 minutes, stirring occasionally, until they turn a very dark brown color (but be careful not to burn them).
5. In the last minute of cooking, add the garlic and stir in to combine (be careful not to burn the garlic!).
6. Season with salt,  and lemon juice (if using) to taste. Serve warm.

Servings: 4

Time Change

I always feel  a little cheated when time changes….and we lose one hour. I guess wait until spring and we get it back, but I am sleeping in tomorrow anyway.

I grew up on a dairy farm and we never got to sleep past 7 am. I couldn’t wait until I was grown so I could sleep as late as I wanted to..<grin> Isn’t life grand when your a child ?? If we knew then what we know now we would have never been is such a hurry to grow up.

I am posting another “healthy” recipe that we enjoy and I hope someone tries it (??) We have used this recipe a couple of times and will continue to make it. We found it to be very good. It is a side dish Here it is and I think it’s a keeper !!

Zucchini Corn Saute       from Taste of Home’s Light & Tasty Cookbook Annual Recipes 2004  Submitted by Barbara Lundgren, New Brighton, Minnesota

4 1/2 cups sliced zucchini (1/4 inch slices

1/4 cup diced onion

1 tablespoon olive or canola oil

1-1/2 cups fresh or frozen corn, thawed

1/2 teaspoon salt

1/4 teaspoon ground cumin

1/8 teaspoon pepper

In a nonstick skillet, saute zucchini and onion in oil for 4-5 minutes. Stir in corn, saute 2 minutes longer or until vegetables are tender. Sprinkle with salt, cumin and pepper. Yield: 4 servings

Nutritional Analysis; 0ne serving (3/4 cup) equals 104 calories, 4 g fat (1 g saturated fat), 0 cholesterol, 307 mg sodium, 16 g carbohydrate, 3g fiber, 4 g protein.

Diabetic Exchanges: 1 vegetable, 1/2 starch, 1/2 fat

A Do Nothing Friday

Today I may or may not get dressed….I think NOT !!

I had a new recipe last night that was very tasty and I would like to share it. This meal is on our new change of life diet. I hope someone will try it and ENJOY !!

I got this recipe (that my daughter, Stacy actually did the cooking) from my Taste Of Home Magazine March 23, 2009 Issue. Submitted by Kelly Young, Cocoa Florida.

It is called:    Sausage & Rice Stew

1 pkg. (16 oz) smoked turkey kielbasa, halved lengthwise and sliced

1 large sweet onion, chopped

2 shallots, chopped

1 Tbsp chopped pickled jalapeno slices

1 garlic clove, minced

1 Tbsp canola oil

2 Cups water

1 can (14-1/2 oz) reduced sodium chicken broth

2 cans (15 oz each) white kidney or cannellini beans, rinsed and drained

1 Cup uncooked long grain rice

1 tsp dried  oregano

1 tsp dried thyme

1/2 tsp pepper

2 Cups fresh baby spinach

In a dutch oven, saute the kielbasa, onion, shallots, jalapeno and garlic in oil until onion is tender. Add the water, broth, beans, rice and seasonings. Bring to a boil.

Reduce heat: cover and simmer for 15 – 20 minutes or until rice is tender. Stir in spinach. Cook 5 minutes longer or until spinach is wilted.

Nutrition Facts: 1 1/2 cups equal 369 calories, 7 g fat(2 g saturated fat) 47 cholesterol 1.162 mg sodium 52 g carbohydrate 7 g fiber 22 g protein

YIELD: 6 servings

We served this with cornbread muffins….made with skimmed milk, and 2 Tbsp canola oil, 1 cup all purpose flour, 1 cup cornmeal, 1 egg, 1 Tbsp Splenda, 3 1/2 tsp baking powder. Baked in muffin pan sprayed with canola oil at 425 degrees for about 15 minutes…..Not real sure on the calories for this but our best guess is around 140 calories a muffin.

I hope someone will try this recipe ?!  Because I will be adding a lot more to my blog….If I have to eat healthier I want everyone to eat healthier !!!

The New and The Old

The new being the blogging, the old being ME….

Can it be ? Me blogging !!!

My daughter thinks I should blog about  little stories and things I find interesting or funny, past and/or present  that I can share. I am not sure how this is going to turn out but I will try my best.

Mamoo in the middle, comes from my grandkids calling me Mamoo, and I was born the middle child, having a sister 4 years older and a brother 11 months younger. What that means is…..My sister could do things I couldn’t BECAUSE she is older….My brother could do things I couldn’t  BECAUSE he was a boy !!! Now tell me, how fair is that ??!!  So that’s how we arrived at a blog name and I hope this gets more interesting as time goes on.

I can’t say my life has been interesting but it has been different.

Today I find myself trying to make a life change in my diet. So… I am thinking food as I have known it, is no more. I am choosing a healthier way of eating and hopefully I can stretch out my time on this earth…..I am dragging 2 of my daughters along with me !!! To our surprise….It has been pretty good. We have discovered veggie crumbles and really like them. They can be cooked in a number of ways….Today we discovered that veggie sausage is very tasty. Our first goal was to lose weight but now I am finding that my blood pressure is at its lowest in 15+ years, so I am thinking we may be onto something here !!?

I will be posting how we are doing on this blog and maybe sharing some recipes that I find really tasty and since we are counting calories I will post that info also.
